Why did we choose to harvest the grapes of our Vermentino at night? 

The night harvest was designed for those varieties of white grapes that are more sensitive to light, to heat and thermal stress and with an important aromatic set (such as Vermentino) or for those grape varieties that form the basis for the production of sparkling wines The night harvest takes advantage of the temperature differences between day and night to ensure harvesting the grapes in the most favorable environmental conditions, preserving their qualitative characteristics.

One of the main advantages of this practice is lower temperatures during the night compared to daytime ones. In Sardinia as in many Italian regions, Especially in summer, temperature ranges can be significant with peaks reaching 35°C during the day and dropping to 15°C at night. The cooler night climate makes the work of the grape harvesters less tiring, improving efficiency of operations.


The main benefit is linked to the preservation of the aromatic properties of the grapes. Harvesting at night allows the characteristic aromas of the fruit to be preserved in the best possible way. During the night, in fact, the berries contract, favoring the concentration of aromatic compounds inside them, while the high temperatures of the day can disperse them. The grape skin, thanks to the temperature range, becomes more flexible and resistant.


This means that the berries harvested at night are more intact, compact and less prone to damage during transport to the winery. This reduces the risk of unwanted fermentation, oxidation or loss of aromas, safeguarding the quality of the final product.

 

Cagnulari is an ancient native black grape variety from Sardinia.

This variety, as often happens, risked disappearing, overshadowed by more well-known and commercially advantageous vines, such as Cannonau and Carignano.

Their greater ease of cultivation and international prestige have made them preferable to the detriment of Cagnulari, which risked being forgotten.

Fortunately, the world of wine is made up of far-sighted people, ready to bet on what truly embodies the identity of a territory, its history and its traditions, even at the cost of facing great difficulties.

It is precisely on this grape that the Sassari winemakers have focused with determination, and the results obtained demonstrate that their choice was a winning one.
Cagnulari is a demanding grape variety, requiring great attention in the vineyard: its sensitivity to climate conditions – humidity, heavy rain or extreme temperatures above 40 degrees – requires meticulous and constant work.

Even in the cellar it leaves no margin for error: it takes very little to compromise an entire year, making it a challenge as demanding as it is fascinating.
The wine obtained from Cagnulari is distinguished by its ruby ​​red color and intense aromas of wild berries, enriched with spicy and balsamic notes.

On the palate it is dry, slightly tannic, but always balanced and harmonious.
